Allow for adding models after start #89

I fixed the issue I was discussing in #88, but I'm not sure this the 100% right approach.

Figure I'll propose this first and start a discussion. The documentation needs to be updated about #88 at the very least though since there's no mention of state parameter to the start method. ✨
