Dark mode implementation #93

I've added dark mode for all the components I've seen that didn't have them. I've also added a dark mode switcher component and added it to the header.

The actual dark mode impl is based on https://github.com/pacocoursey/next-themes.

Let me know if you have questions or want me to change anything.

This is a really great PR, thank you very much for adding this it is well overdue. I'll probably make some slight palette changes down the line, but I am happy to merge and deploy this once the icons are updated.
