Should we add minIO to test suite? #97

Pangeo-Forge uses minIO to test against s3-like buckets. This could be useful for the current s3 / fsspeec reading work.

Testing against S3 would be great! I think I've seen others use minIO for the same thing too (in Cubed, + possibly the Earthmover crew) so that seems a good way to go 👍
