Upgrade complete. Here some thoughts:

don't forget that Maven sometimes needs to be forced to update all repositories. do this by adding -U to your mvn command
Xtext stops using xtend-Files, except for the generator. I refactored all xtend-implementations to java, except of course the generator. And I did not touch the formatter - if the formatter should be refactored, please create an issue for it
JUnit 5 is now properly in place. Nowadays Eclipse has the needed support for it implemented. Please note that this requires a change in the programming model of all tests.
Upgraded to tycho 2.3 in order to support JUnit 5 (because of bug https://bugs.eclipse.org/bugs/show_bug.cgi?id=569949)

Please verify these changes by re-importing the project in a new eclipse and try to run the product build.
