Serio's Hotkeys
Pro: The fastest, most responsive hotkey system there is aside from a much more limited one that simulates the Vanilla Hotkey system. inspired by AH Hotkeys, this mod is stable, quick, and works even under the heaviest loads. You can assign anything to either hand or the shout/power slot.
Con: If you play without weight limits, you'll see hard 20+ frame drops when you hit a hotkey if your inventory is packed. Think 4k in weight or several pages of weapons/armor. This is easily resolved by depositing items until you're not carrying as much.

Smart Harvest NG Autoloot
Pro: You can decide what you pick up, how much, whether it's instantly sold, or left on the ground. Filter by item types, value, and many other things. You can even White and Blacklist specific items and locations. Great for people who want to focus more on the action of Skyrim than the looting, can't stand to leave anything behind, are on their 1,000th playthrough, or simply don't want to have to check bodies for weightless things like gold, lockpicks, or gems. Highly customizable. Also has filters for Quest items so you won't break a quest by picking up something you weren't supposed to yet.
Con: For those without self control, this can be seen as a cheat. It is scripted, albeit well, so it adds to script load. It's configured to work very well with vanilla quest items, but idk how it plays with custom quests. I know some quests have flags on items for when they're picked up normally. Picking them up with this mod might prevent necessary scripts from firing.

Thunderchild - Epic Shouts and Immersion - WONT - Using SImonRim suite for gameplay in this list
Pro: Shout overhaul that makes the vanilla shouts more useful and adds a myriad of new ones. Gives you much more to do in the game, and more things to do it with. Maybe vanilla shouts were underpowered, overshadowed, or useless late game. This addresses all that and more.
Con: More powers means a more powerful PC. Could argue that it would be harder to balance against than the default setup. I wasn't able to find a way to make my stamina drain outside of combat, so I used the console command "player.modav stamina -x" (x being 1 less than my max stamina) while praying, standing up, then after unlocking the new shouts I would undo it with "player.modav stamina 122".

Wheeler - Quick Action Wheel Of Skyrim - ADDED
Pro: Adds a quickwheel interface to Skyrim. Very easy to setup, organize, edit, or ignore if you so choose. You can have time paused or slowed down. Works with all items, weapons, powers, shouts-- anything. Very responsive and stable.
Con: n/a. Seriously, I don't see any downside to this except that it takes up another button on your keyboard/gamepad.
https://www.nexusmods.com/skyrimspecialedition/mods/13402
Immersive Horses ADDED
Pro: Faster, more responsive horses with more stamina. Features such as: hotkeys for quick dismounting with optional weapon drawing; using magic on horseback; turning on the spot with hotkeys; storage pouches; follow/wait/call hotkeys; claiming wild/stolen horses for your own; renaming horses; gather horses for your friends or spare horses for yourself; trampling enemies; horse kicking attacks; set horse as protected/essential.
Con: n/a? There was an old compatibility issue where your horse would go back to the stables after you buy them, but it's been patched and I haven't had the issue even without the patch.

Dragon Claws Auto-Unlock
QOL mod where a dragon claw automatically sets up the door and unlocks it after insertion with no additional effort from you. Do we really need to look at the claws ten years later?
Con: "Muh immersion. T_T", might not work with modded claws/dungeons, but then you're back where you started so still no issue.
https://www.nexusmods.com/skyrimspecialedition/mods/37099
Individual Shout Cooldown Remake
Pro: Gives you more reason to hunt down shouts as they're now much more than free spells but an entire fighting style. Gives the more useless shouts that are overshadowed by others more room to shine.
Con: You can become very OP if not counter-balanced properly. Shouts need a longer cooldown to make that happen.

Better Container Controls for SkyUI
Gives you new controls for moving things in containers. A button for depositing everything on your filtered screen such as your weapons, armor, OR potions. Removes the Quantity Prompt and instead allows you to move 1 item with left click, all items with right click, or bring up the Quantity Prompt on demand with Space.

Alternate Summoning Visuals
I converted this so lmk if you want it uploaded. Changes the visual effect of summoning to a small circle at the feet, which makes it easier to see what's going on. Not only with the summon, but with other things in the room.
Give yourself something to look forward to when doing quests, whether main or side. When things get rough, power up by playing the game instead of grinding or exploiting. In the case of Radiant Quest Point System, you can also change the gold you earn if you so choose.

Faster Horse Dismount SSE (with optional Faster Mounting)
Makes the default dismounting animation quicker. Without this, when using Immersive Horses you'll be tempted to quick dismount every time. Which pulls out weapons, which slows you down. This is a good way to get off your horses quicker without seeming like a psychopath.
https://www.nexusmods.com/skyrimspecialedition/mods/21103
Quest NPCs Run
No more slowly walking behind Delphine or that Priest from Dawnstar. Now people move with purpose. Note they "run" not "sprint", so it's not like they're in a panic when they don't have to be,. No immersion lost.
https://www.nexusmods.com/skyrimspecialedition/mods/92353
Cancel Attack - ADDED
Cancel attack animations. Great for setting up a block mid-attack, or min-maxing animations with some good timing. Gives combat a new layer for advanced players, and newbies aren't stuck committing to attacks entirely.
https://www.nexusmods.com/skyrimspecialedition/mods/62423
Custom Skills Menu - A Custom Skills Framework Unified Menu - ADDED
Adds a new menu to the Tween Menu, allowing you to access your custom Perk Trees/mods. The one for vampires included in the current wabbajack list works great.
https://www.nexusmods.com/skyrimspecialedition/mods/67556
Menu Maid 2 - MCM manager - WONT - Gave this a go, and it has issues with a fully automated MCM Recorder use. You have to Dismiss the mod before running, so it would require all list users to dismiss the mod, then run the MCM recorder preset.
Move and/or hide MCM entries or even rename them. Great for putting MCMs you frequently use (looking at you Follower Framework) at the top of the list.
With Immersive Horses, I will go ahead and close this one out on the next release. Thank you tons for the suggestions that have been in previous versions, as well as the next :)
