Only use sphinx-doc as a build-time dependency. #118

sphinx-doc is not needed at runtime (see e.g. the zathura readme, which states this explicitly).

Also, the "sphinx" brew package is something completely unrelated (and even deprecated) -- see https://formulae.brew.sh/formula/sphinx.
