Updated README and nicer defaults #19

Updated the README to reflect that it currently binds the latest hzeller library version, and to reflect the small changes in API for ledmatrix.

also changed the default hardware mapping from 'adafruit-hat-pwm' which is a bit niche; to just 'regular'
