Update to work with zend-servicemanager v3

Updated dependencies to versions known to be forwards-compatible with zend-servicemanager v3. Updated the CI setup to test against the lock file, lowest supported, and latest dependencies.

Forwards-compatibility required the following changes:

• The HelperPluginManagerFactory needed updates to work with both v2 and v3 instantiation and configuration of plugin managers.
• The ZendViewRendererFactory needed updates to how it injects the override factories to ensure that they work as expected with zend-view 2.6.

Ping @Ocramius ; this was what you requested yesterday. If tests pass, I'll issue a 1.1.0 release.

@Ocramius and... tests all pass. I did a double-check on them to see what the lowest and latest targets installed, and they were indeed v2 and v3 versions of zend-eventmanager and zend-servicemanager, respectively, proving that this will work in both situations.
