Is it possible for the device to render/show a 'service not available' page that is uploaded to the device or redirected to a holding page server it all the real servers in an LSLB farm are not available? (F5/NGINX+/KEMP have this functionality) Thanks

This feature is totally available, in HTTP farms use the error messages, the 503 is shown when there aren't backends available.

Question - if the backend servers are not available, is it the Zevenet device that is replying to the client with the 503?

Yes, if you work with an HTTP profile farm and the profile detects that all the backends are down then a 503 will be replied to the customer.
