Correct use of patchKey in zf-configuration

zf-configuration' patchKey acted like a replaceKey. Fixing this alone breaks this repository. A fix comprised of three repositories will need to be applied together.

• [ ] [not ready] Update composer.json on https://github.com/zfcampus/zf-apigility-doctrine to require the release for zf-configuration done above and update require-dev for zfcampus/zf-apigility-admin to the zf-apigility-admin release created above.
