Changes for code release #33

Still WIP, but the changes in this PR are:

  1. Trimmed down environment.yml file
  2. Removed obsolete GAT architecture
  3. Include data files, and links in the case of files that are too large
  4. Update README
  5. Update demo notebooks

..

  1. and 2. are done, working on the rest at the moment.
