prepare last versions beta #1185

I fight with the commit message, but I finally push my proposal of new sermi version (future v3 proposal) discussed in the following discussion https://github.com/zino-hofmann/graphql-flutter/discussions/1179

Update also the docs :)

Let's skip this final beta before releasing the official one!
