Since there are distinct unicode symbols for \epsilon = ϵ and \varepsilon = ε, for example, doesn't it make sense to render them differently?
\epsilon = ϵ
\varepsilon = ε
I believe we also have distinct unicode characters for all of the other Greek letters with a "var" variant.
