Fix outdated workflows that refer to ZWESVSTC

When reviewing workflows I discovered that they're prompting the user for things that make no sense in modern zowe.

They refer to 2 STCs: a required ZWESVSTC and an optional ZWELNCH/ZWESLSTC.

Since zowe v2.0 in 2022, ZWESVSTC was removed and ZWESLSTC became required. So, I have cleaned up the workflow by updating references to these items.
