This PR introduces the following fixes:

main README.md file is now
- formatted
- file list is converted to table instead of headings
- script descriptions are rewritten
template.md file is now
- formatted
- has better structure
- has better wording
projects/README.md is now
- formatted
- has some minor text amendments
projects/exoplanet_hunting/README.md is now
- formatted
- has some minor text amendments
