IIRC that's because this way to install does not exist when this cookbook was created.
Anyway, supporting this installation method would be a nice addition to the cookbook.
Why do you not install owncloud through the opensuse build service, which is the preferred method from the owncloud documentation? The update process is easier and you can install it through apt, yum,...
