Added missing dependencies and changed pkg-config to pkgconf #97

Sorry if I'm doing this wrong. I have absolutely no clue what I'm doing and this is my first ever pull request. I was building zyn-fusion with MSYS2 and it seemed some dependencies were wrong/missing. Got it to work after making these changes to Install-deps.mk

Thanks for the pull request. It looks like all three of the modified platforms have transitioned over to pkgconf, so we should be all good to go. :+1:
