Locking plat-man to the first release with versioning #270

Locking to this commit, which introduces versioning for platform management: https://github.com/Accenture/adop-platform-management/commit/53db75040b44fb94a1ce2d300944e33912c62dfa

This will insulate adop-docker-compose from changes to platform management, allowing a controlled upgrade of the component.
