Add NEWS.md file for each release (check CRAN), a list of features, fixes, and changes should be created using the Pull Requests descriptions, linked issues, and sometimes also the code that was changed. Since the project lacks also the releases on GitHub, the exact commits that were released have to be determined (compare dates of CRAN releases and the version in the DESCRIPTION file).
