Fix name of setting in README to exclude `PreviewModels` #68

The README identifies the setting to exclude PreviewModels as NO_PLAYBOOK but the template uses PLAYBOOK_DISABLED. This updates the README to specify PLAYBOOK_DISABLED instead.
