Region averaged specific humidity #15

Used regionmask to create average specific humidity at the country level (rather than single point humidity)

This looks great! Thanks Mara! I'll see if I can clean up a few things (e.g. the date selection part) and merge it sometime today.

I couldn't figure out how to contribute to this pull request so I think I accidentally just duplicated it here: https://github.com/COVID-Weather/covid-environmental-factors/pull/19 ... I guess I'll manually close this one when that one gets merged?
