I created a flow using the 'Ticket Updated' event and found out that the ticket payload on the "ticket" and "from" object is not correctly logging the changes.
Board change - correctly logging the "from" and "ticket" board
Status change - correctly logging the "from" and "ticket" status
Priority change - both "from" and "ticket" has the new priority set
Service type change - both "from" and "ticket" has the new type set
Service sub type - both "from" and "ticket" has the new subtype set
