In the form editor you can't unselect the default option (if you picked one) for single select choice fields. The workaround is to delete the choice and then add it back to the field.
Also when using the form in the portal, you also can't unselect a radio button choice. There may be an occasion when this is a deliberate intention e.g you picked something but then changed your mind and don't want any of the choices
