It appears there is no way to set the DNS server to be used with a static IP address.
The default server (one of the OpenDNS servers) doesn't seem to work for me from the Ultimate II+, though it works fine from macOS. There are only minor differences between the query from the Ultimate and the Mac. I didn't attempt to track down which difference was significant.
DHCP does set the DNS server, so the problem is minor, but I'd really rather be using static IP addresses.
