Update docker-compose.yml for newer Docker image env vars #73

After Dockerfile changes were accepted into the PictShare-Docker repo, here are the updated environment variables for docker-compose.yml to more-closely match the config.inc.php.

One thing to note is that this should probably not be merged in until the official DockerHub image is updated.
