Given docs now exist in IATI-Guidance, remove them from this repo #302

Since https://github.com/IATI/IATI-Guidance/commit/5f6f733bf22a8839aeaa392872fbe5cc1d7d3ef7, Datastore docs have lived in IATI/IATI-Guidance.

I’d suggest removing the legacy docs from this repo, to avoid confusion / duplication, and reduce maintenance overhead.
