Docs: Add person profile config #8665

Changes

We want people to use person_profile: 'identified_only' so adding it throughout docs and tutorials. It isn't everywhere, because there are a bunch of moments when it isn't relevant and I don't want to confuse people.

Do you think this PR is a good place to think about mentioning that it is an extra charge? Maybe we just do that in the people docs?
