Docs: user properties -> person properties

Changes

With the introduction of person profiles, it becomes more important to be consistent with our wording. Although we were using person properties in many cases, we weren't using them in all situations, so updating this.

Some cases where I kept user properties:

• /docs/data/user-properties links that were already being redirected
• Referencing user segmentation when comparing against competitors
• Some SDKs have a userProperty method. Have changed the description, but method name stays the same.
