Remarks:

I learned that the triple-backticks without "r" will create a code-like environment that is appropriate for showing code between sections of regular text.
I like that you re-named the columns of your kable in Exercise 3 so that the table is visually clean.
I like your choice of contrasting colours in the improved Canadian life expectancy plot to highlight the points on top of the regression line.
I think Oceania in the improved GDP per capita plot could use its own axis for better visibility, though I understand you lose the comparability with the other plots.
