Setup user authentication on the backend. #10

Description

We need to figure out how we want to implement user authentication on the backend.
Define User Models and Schemas
Create REST API to post/register a user
Hash user password
Define GET request to get user and list of users excluding password.

When

Collaborate with frontend to see where they are at with the sign in and login pages.
