PDF classifier for freight brokerage company

Depending on what type of document it was, trigger a workflow
Trucking company receiving various docs in email
Workflow
- Import PDF
- Convert to markdown
- Invoice => send to Quickbooks
- Shipping order => send to transportation management system
- Customs documents => send to customs processor team
- Permits => send to customs processor team
- RFP / RFQ => send to quoting team
- Sales contract => send to Hubspot
- (if none of the above) => send to email support team

This looks like a good Dagster + MonkeyPatch solution
