Replace occurences of hardcoded directory under anczukow-lab #307

Problem

The directory is hard-coded in the sumner.config:

singularity {
  enabled = true
  cacheDir = "/projects/anczukow-lab/.singularity_cache/"
  autoMounts = true
}

and in some test files - including the human test.
