Update platformio.ini #10

Changed the src_dir variable to examples instead of example to match the actual folder structure

Users will get this issue when trying to compile the current examples .platformio/packages/framework-arduinoespressif32/cores/esp32/main.cpp:48: undefined reference to `loop()' since it can't find the arduino file to compile
