Story As users we should see classifications of predicted data so we can know what's coming

Acceptance Criteria:

[ ] use same data, fill gaps with mean
[ ] score to classify on picked (docs at https://cloud.ouraring.com/docs/sleep)
[ ] classifying historical
[ ] model makes non-straight line predictions
[ ] classifying predictions (goal)
[ ] docs written (how this works)
