Implement the PublisherProperties from the Android AAT in Swift. The class definition itself is being added in https://github.com/ably/ably-asset-tracking-swift/pull/573, we just need to add the members.

At this point, we're proposing that we don't switch things out in the "old" publisher - but migrate things along as we introduce workers.
