Why are the changes needed?

Add hadoop2 profile and set the default to hadoop3.

Brief change log

Remove hadoop3 profile and make it the default
Change profile activition
Adapt GitHub workflows and README

[ ] Add some test cases that check the changes thoroughly including negative and positive cases if possible
[ ] Add screenshots for manual tests if appropriate
