Several plots need to be upgraded:

Lat and Lon needs to be added to the plots axis
Scale bar needs to be added to at least one plot on each grid axis plot

the stereo projection is the SH polarstereo projection with the WGS ellipsoid: https://nsidc.org/data/polar-stereo/ps_grids.html. the EPSG is 3976, if you are using something like pygdal -- but i also have matlab scripts that can be transferred to python easily -- may be easier.

If you can share the script I can start with that. I've done something similar with pyproj for Greenland
