Our first target is Mizo, however google translate doesn't support Mizo, and I'd like to have a language supported by google translate to do testing with. So I think I'll stick with burmese for now for proof of concept and testing.
Sure. Joe knows some Swahili, and I know Spanish, if that helps.

For different languages I don't think we should offer language switching inside the app. Rather we can do multiple builds which each target a different language and bake in the localised strings.
Language preference detection is best done server side, so automatically serving users to the correct build for their language is something that will have to wait until we are running our own server. For now I suggest:
