Users should be able to install pyPoseidon without having to install all the visualization libraries.

I was about to post the same "issue". We can go for [core], [viz], [app] options.

As far as poetry goes, the optional dependencies can be handled as mentioned here: https://python-poetry.org/docs/pyproject/#extras
