According to @Trapist the only way to protect a logo is to register as a trademark. But otherwise the choice of the license looks OK to me.
Where would be the right place to write this information down?

You should write it in a special file called license on GitHub.

As the images are shown on a webpage and probably scraped by google it would be important to add the license to the meta-data of those images/svg's/sketch files.
Okay. (after offline conversation) Let's go with the licenses as described ↑. The License is to be given by the individuals that make the illustration/logo (@Tannybunny) and to be added in the files metadata. Please specify your name or nickname in the license and a way to reach you for the forseeable future - email address likely.

@dkastl @consento-org/design as the illustrations are part of the visuals of consento it would be good to have a proper license to it.
After reading through creative-commons documents, my recommendation is to use the license CC-BY-NC-SA, for everything but the logo, it allows:
For the logo the CC-BY-NC-ND might be the better choice as it even forbids modification - which for a logo makes sense.
As licensor I would intuitively say that the individuals that made whatever illustration/logo/image are specified. This means that if ever changes to logo etc. are supposed to be made, those people need to give their okay. Alternatively the individuals can/should pass the rights to an organization, as the organization can eventually make a trademark out of this.
