Reduce overhead by including a demo workspace in this repository, instead of having a separate repository.

[ ] Check if the main branch is still using the workspace for anything specific.
[ ] Merge content, helpers, docs from https://github.com/data4development/demo-workspace.
[ ] Close demo-workspace repository.

outcome should be to have a "demo" target to initialise and populate a workspace with all demo materials.
