feature: change display of analytics to tables for Head, Low Confidence, and RAG Queries #1771

Description

Right now the flex justify-between view for the UI cards in the analytics limits our ability to add keys to the responses for additional information and display them in the UI.

Goal here is to refactor these displays to use tables so we can more easily add fields.
