update 2020_rotation_project to 2021_rotation_project, or something else that won't go out of date each year #36

The main project work directory is called 2020_rotation_project, which was fitting in 2020 but is now out of date. I think we should change it to dib_rotation_project or something similar that will not go out of date each year :)
