Docs update - set the display from #6

SES supports setting the display from on the source email, but it was not obvious how to do so. I updated the docs.

Thanks! The readme updates, however, need to go in Readme.erb, not Readme.rdoc. I will make a copy of your changes and apply them to the gem soon!

OK - I committed the changes in the .erb file too.

Thanks very much. The merge would not go cleanly because of other stuff in the pull request. But I did copy in your documentation and added you to the contributor list.
