Added instructions into the README to use Java 11 when it's need to perform the tests

The project just perform the tests with success when we use Java 11; Here is the issue about it: #333

Can one of the admins verify this patch?

The new Jakarta EE 11 will work with Java 17 or higher. I like the option to open an issue as you did and go to fix this bug.
