Bump version 1.0.0 #146

Prepares for a stable 1.0.0 release.

This release would signify the start of a stability commitment, and allow us to update APIs to be reflictive or the current state and things which we have learnt since.

@yaahc, I would like to request your signoff on this :)

Will write a document with more details, but three considerations to consider for now:

Would we want to update any crate metadata to reflect the current organization?
We will need leave time to engage with the community and listen to their opinions of breaking changes and proposals
color-eyre et.al will need to be updated when the time is appropriate. This will become easier once I merge color-eyre into the current workspace
