chore: setup API credentials via Rails.application.credentials #23

Was not aware of Rails.application.credentials but seems to be the recommendation nowadays

Seems to support a good amount of use cases, including multiple environments

It's good enough to get started and is likely to work well with our the current deployment infrastructure and requirements
