On macOS and Linux the .ico app icon wasn't compatible and the default java logo was used as a fallback. I have added the appropariate formats for each platform and set the jpackage arguments accordingly.
Also on macOS and linux one has to pass additional arguments to have the programm display the correct name in the menu bar etc.
