Add option to generate mock data from model instead of sim #23

When testing the emulator it is useful to generate a mock from a simulation that is outside the training set.

However, for forecasting purposes, it is also useful to be able to generate a mock from a given model (as is done in a Fisher forecast).

Addressed in PR #30 , but proper testing is needed
