Upgraded GeoServer from version 2.25.1 to 2.25.2 #668

Upgrade to Geoserver 2.25.2 to addresses critical vulnerability CVE-2024-36401.

Followed the readme to upgrade the version.

@tebben can you also make changes to https://github.com/kartoza/docker-geoserver/blob/develop/.github/workflows/build-latest.yaml#L66 and https://github.com/kartoza/docker-geoserver/blob/develop/.github/workflows/deploy-image.yaml#L29, so that we can publish the latest images
